ABOUT Besan Ka Seera / Lappi | Gram Flour Sweet Gruel RECIPE

Change of season would bring in the common cold, flu, cough and mom would make this deliciously therapeutic besan lapsi or sheera for us. We had it during harsh winter nights too. Simple yet traditional home remedy since many generations. Lip smacking too.

Ingredients Serving: 2

  1. Besan | Gram Flour - 4 tablespoons
  2. Ghee / Clarified Butter - 2 1/2 Tablespoons
  3. Sugar / Shakkar - To taste (I added 2 Tablespoon)
  4. Water or Milk - 2 cups
  5. Green Cardamom Powder - 1-2 pinch
  6. Black Cardamom Powder - 1-2 Pinch
  7. Black Pepper Corns - 5-8 Pounded coarsely

Instructions

  1. Keep a heavy bottom pan on medium heat and add ghee to it.
  2. Once the ghee is warm reduce the heat to low and add gram flour or besan.
  3. With a wooden spoon or spatula roast the besan / gram flour till it changed colour tone to brown and the raw smell is replaced by a nutty aroma. 10-15 minutes approximately. Keep stirring to avoid burning the gram flour.
  4. Stir in the powdered spices.
  5. Add water and stir properly so that no lumps are formed. Increase the heat to medium high.
  6. The seera will look grainy and lumpy so keep stirring till it becomes smooth and nice.
  7. Reduce the heat and add sugar or shakkar. Stir it properly and let it simmer for 20-30 seconds on low heat.
  8. If the seera has thickened you can add a little warm water. It should be of a thick soup like consistency which you can sip.
  9. Pour in mugs or bowls and consume when hot.
