Vegetable biriyani

Ingredients to make Vegetable biriyani

  • Basmathi rice - 1 1/2 cup
  • Vegetables ( Carrots, beans, cauliflower, potato, capsicum, peas) - 1 cup
  • ginger garlic paste 1 tbsp
  • green chillies - 4 , slit lengthwise
  • onions - 1 large, thinly sliced
  • tomato - 2 medium sized, diced
  • curd 3 tbsp
  • cinnamon stick - 2 small sized sticks
  • cloves - 4-5
  • cardamom - 3-4
  • bay leaf - 1
  • star anise - 1
  • saunf / aniseeds - 1 tsp
  • oil - 1 tbsp
  • ghee - 1 tbsp
  • salt to taste
  • sugar 1 tsp
  • Water (1.5 cups for every cup of rice) , alternatively 1 cup water and 1/2 cup coconut milk to every cup of rice
  • turmeric powder 1 tsp
  • red chilli powder 2 tsp
  • coriander powder 3 tsp

How to make Vegetable biriyani

  1. In a pan, heat oil, add the whole spices and let them crackle.
  2. Add the onions, a pinch of sugar and saute for a minute.
  3. Add the tomatoes, curd and mix.
  4. Add the vegetables, spice powders and mix.
  5. In an electric rice cooker, add the water and heat. The veggies need to stay on the pan only until the water starts to heat. Add the salt to the water.
  6. Once the water is a little warm, add the veggies to it.
  7. In a pan, heat the ghee , add the basmathi rice. Make sure the ghee coats well
  8. Add this to the cooker and let it cook.
  9. Once it moves to warm mode, open and mix once, cover the cooker lid with a thick cloth and leave it for 10 minutes.
  10. This flavourful rice can be served with any gravy or just a good raita would do.
