ABOUT Vazhaipoo (Banana Flower) Paruppu Usili RECIPE

This is a traditional recipe which my grandmother used to make regularly at home. Banana flower is a leafy maroon colored cone with cream colored florets layered inside. These florets should be cleaned well before they are cooked. The banana flower is rich in vitamins, flavonoids and proteins. The flower has been used in traditional medicine to treat bronchitis, constipation and ulcer problems.

Ingredients Serving: 5

  1. Banana flower - 1 big
  2. Toor dhal - 1 cup
  3. Red Chillies - 5
  4. Salt - as needed
  5. For Seasoning:
  6. Mustard - 1 Teaspoon
  7. Oil - 3 teaspoons
  8. Red chilly - 1

Instructions

  1. Soak toor dhal for 1 hour in water.
  2. In the mean time, clean the banana flower by removing stamens and chop it.
  3. Put the cut pieces in buttermilk so that it will not turn black.
  4. After 1 hour, grind the dal along with chilli and salt with less water.
  5. In a pressure cooker, apply oil and steam the ground dal paste for about 10 minutes.
  6. When cooled crumble and keep.
  7. When the dal is cooling down, steam the banana flower without adding water for 5 minutes.
  8. Take a pan and splutter mustard seeds in oil and the fry red chillies.
  9. Add the banana flower and salt and cook till water gets absorbed.
  10. Now add the crumbled dal and fry well and serve hot with rice.
