Kerala style recipe of salted steamed rice balls

Kuzhakatta

Ingredients to make Kuzhakatta

  • Red parboiled rice(1cup) or rice flour
  • Grated fresh coconut (1/2 cup)
  • jeera(1tbsp)
  • salt as required
  • water to bind the dough

How to make Kuzhakatta

  1. If using parboiled red rice, soak it overnight.
  2. Drain the rice and let it dry for 30min by spreading over a kitchen towel or paper
  3. Grind the rice without water to make a coarse powder.
  4. If using rice flour, you can skip the above steps
  5. Grind the coconut and jeera together to form a paste
  6. Add salt and the coconut-jeera paste to the ground rice/flour and bind it to form the dough adding the required amount of water
  7. Make balls of the dough and steam them in a steamer or idli cooker for 10 minutes
  8. Check if cooked with a toothpick.
  9. Serve it with a spicy chutney.

My Tip:

Red parboiled rice is healthy and a natural source of vitamin B12.
