Ingredients Serving: 10

  1. For the saffron colour chicken :
  2. Chicken boneless bite size pieces 10
  3. Kashmiri red chilli powder 1 tablespoon
  4. Ginger garlic paste 1/2 teaspoon
  5. Salt 1/2 teaspoon
  6. Fresh yogurt 2 tablespoons
  7. Turmeric powder 1/4 teaspoon
  8. For the white malai chicken :
  9. Chicken boneless bite sized pieces 10
  10. Fresh yogurt 2 tablespoons
  11. Fresh cream 1 tablespoon
  12. Unsalted soft butter 1 tablespoon
  13. Cream cheese salted 1 tablespoon
  14. Salt 1/4 teaspoon
  15. Ginger garlic paste 1/2 teaspoon
  16. White pepper powder 1/2 teaspoon
  17. Crushed dried fenugreek leaves 1/2 teaspoon
  18. For the green coriander chicken :
  19. Chicken boneless bite sized pieces 10
  20. Ginger garlic paste 1/2 teaspoon
  21. Coriander leaves 1/4 bunch puréed
  22. Salt 1/2 teaspoon
  23. Black pepper powder 1/2 teaspoon
  24. Green chili 1
  25. Fresh yogurt 2 tablespoons
  26. Other ingredients :
  27. 4 tablespoons Ghee for grilling / shallow frying

Instructions

  1. Firstly, marinate chicken with the ingredients listed under saffron chicken for Saffron colour Chicken Shashlik.Marinate for 2 hours.
  2. Similarly, marinate chicken for green chicken Shashlik with the ingredients listed under green. Marinate for 2 hours.
  3. Marinate for the white malai chicken with listed ingredients. Marinate for 2 hours.
  4. After 2 hours, arrange tricolor marinated chicken one by one. First green, white and saffron in a skewer. Repeat steps with the remaining chicken and skewers.
  5. Heat 4 tablespoons ghee in a grill pan. Place these skewers (tri colour chicken) on the grill pan and slow grill till colour turns slightly and chicken looks cooked.
  6. Tricolor Chicken Shashlik is ready. Serve hot.
