Brinjal masala is a lip smacking vegetable recipe of brinjals stuffed with masala,a delightful combination of brinjal,onion, tomato , coriander,mint and other masalas

Ingredients Serving: 4

  1. 5-6 small brinjals
  2. 1/2 dry coconut
  3. 3 tbsp roasted peanuts
  4. 1/2 cup coriandr leaves + 8-10 mint leaves
  5. 1 Onion
  6. 1 small. Tomato
  7. 6-7 curry leaves
  8. 1-2 green chillies medium
  9. 1 tsp Ginger garlic paste
  10. 1 tsp mustard seeds
  11. 1. tsp cumin seeds
  12. Pinch of Asafoetida
  13. 1/2 tsp Turmeric
  14. 1 tsp Coriander powder
  15. 1/2 tsp chilli powder
  16. 1 tsp garam masala
  17. 3TBSP OIL


  1. Roast the onion and coconut on direct flame till becomes dark brown to black .
  2. Grind roasted onion and coconut,with coriander ,mint leaves,curry leaves,tomato,green chilli,peanuts into a smooth paste.
  3. Wash the brinjals ,cut the green calyx part and make slits as shown to fill the masala.
  4. Fill all brinjals with above masala.
  5. In a heavy bottomed pan heat 3Tbsp oil. Add mustard seeds,cumin seeds, asafoetida,ginger garlic paste,,turmeric powder , coriander powder,chilli powder, garam masala and stir.Add. Brinjals and fry them in masala till gravy becomes little dark in colour.Add 2-3 cups water and salt and let it cook for 10 minutes or until the brinjals become soft (cooked).
  6. Serve with Bajra or jowar roti and rice.Add lemon juice in gravy to enhance the taste.
