Tender Coconut ice

Ingredients to make Tender Coconut ice

  • 4 tbsp ghee
  • 2 cups tender coconut
  • 1/2 cup Milk
  • 1/2 cup double cream
  • 1/2 cup powdered sugar
  • 1/2 tsp pink food colour
  • 1/2 tsp rose water
  • 1 tbsp chopped dryfruit
  • 1 TSP ground cardamom

How to make Tender Coconut ice

  1. Mix the milk and cream and set aside. 
  2. Melt the ghee in a non-stick pan over a medium heat. Add the caster sugar and coconut, stir for 2 mins, then add the cream and milk mixture
  3. Add the ground cardamom Stir continuously over the heat for about 10 mins or until the mixture starts to thicken. Remove from the heat
  4. Divide mixture in half. 
  5.  1 portion of mixture pink with foodcolouring. Leave remaining portion plain.
  6. Press plain mixture over base of prepared grees pan,
  7. Press pink mixture over plain mixture and chopped dryfruit top with spoon. 
  8. Cover and Chill for until set.
