Ingredients Serving: 5

  1. 2 cups Milk
  2. 1/2 tsp Cardamom powder
  3. Pinch of Saffron (Kesar)
  4. 1/2 cup condensed milk (milkmaid)
  5. 1 Cup Soaked Basmati Rice
  6. Chopped Nuts (Almonds, Pistachios)
  7. Poppy Seeds (Khuskhus)
  8. 1 cup Castor Sugar

Instructions

  1. Method : In a non-stick pan add milk and bring it to simmer then add cardamom powder and saffron. Cover with a lid and reduce the milk.
  2. Then add the condensed milk to it and on a low flame let it simmer. Keep stirring.
  3. Grind the soaked basmati rice coarsely.
  4. Add this basmati rice to the milk mixture and mix well. Take care that it shouldn't form lumps.
  5. Now, let the rice cook and become soft so that the phirni becomes creamy.
  6. The Phirni is ready, cool it down and remove it in the desired bowl to form a cake.
  7. Keep it in the refrigerator for about 2hrs until it completely sets.
  8. Now, with the help of the cutter give a desired shape to the phirni.
  9. Nutty Caramel Disc : In another non-stick pan add the castor sugar. At a certain temperature suger starts caramelizing.
  10. When it is completely caramelized add the chopped nuts and poppy seeds. Mix well.
  11. Now pour the caramelized mixture on a silicon sheet and press with a cookie cutter to form a desired shape.
  12. The Nutty caramel disc is ready in few minutes.
  13. Assembling : Take the Phirni Cake and garnish with caramel disc.
