About Egg Molly Recipe

Molly is one of the finest egg curry dishes that go perfect with appam, chappati and with almost anything. The mildly spiced coconut flavored dish is awesome. Egg Molly is unique and special with steam cooked eggs cooked with spicy ingredients and coconut milk. Egg Molly is an easy to prepare dish very comforting to your tummy.

Egg Molly

Ingredients to make Egg Molly

  • eggs 3
  • onion 1
  • tomato 1
  • green chillies 2
  • Chopped garlic 1 tbsp
  • Chopped ginger 1 tbsp
  • pepper powder 1 1/2 tbsp
  • turmeric powder 1/4 tsp
  • coriander powder 1/2 tsp
  • curry leaves 2 sprigs
  • coconut oil 3 tbsp
  • coconut milk 2 cups(250ml each)
  • salt to taste
  • oil for greasing Idli Mould
  • cloves 3
  • Green cardamom 2
  • cinnamon 2 small pieces

How to make Egg Molly

  1. Start preparing by greasing idli mould with oil.
  2. Add eggs to mould,I added 3 eggs,add pepper powder and salt to taste.
  3. steam cook the eggs.
  4. Once done take them into a plate and set aside.
  5. Heat oil in a pan and add cloves, cardamom, cinnamon saute then add chopped ginger and garlic, saute for few seconds and add chopped onion,green chillies and curry leaves.
  6. When the onion turns light brown in colour add turmeric powder, salt and coriander powder and mix.Then add tomatoes, Cover and cook for 4-5 minutes in medium flame.
  7. When tomatoes turn soft add 1 coconut milk and cook for 2-3 minutes in medium flame.
  8. Then add steamed eggs,pepper powder and 1 cup coconut milk.combine well and cook for 2 minutes. Remove from flame before it starts to boil.
  9. Egg Molly is ready now.
