Mango Cake

Ingredients to make Mango Cake

  • sooji 1 cup
  • maida 1 cup
  • sugar 3/4 cup
  • Baking powder 1sp
  • baking soda 1/2 tsp
  • Mangoes 2 medium
  • cardamom 4 (powder)
  • olive oil 2 tbsp
  • yogurt 1/4 cup
  • salt a pinch
  • Chopped Badam and cashews
  • Hot water 1/4 cup

How to make Mango Cake

  1. Pre-heat the oven at 150 degree centigrade.
  2. Mix sooji, maida, baking soda, baking soda, salt and keep aside.
  3. Grind mango pulp, sugar and cardamom powder to a puree. Add oil, yogurt and blitz for 2 seconds to make sure that everything mixed well.
  4. Add ground mango puree to the dry flour mixture and mix everything well if required add hot water and mix well.
  5. Transfer this mixture to the greased loaf tin and top the cake batter with chopped nuts. Keep it for baking in the oven. Bake for 35-40 minutes or till it is baked all the way inside (check with a knife or a toothpick), for me it took 36 minutes.
  6. Cool it for 15-20 minutes, demould and slice and serve.
