    Italian Rice

    Ingredients to make Italian Rice

    • rice 2 cups (washed, drained and cooked)
    • Vegetables, sliced - onion 1
    • Bell peppers 1
    • Broccoli 1/2 or 1 if small
    • carrots 1
    • Beans a few
    • Red Sauce - tomatoes 500 gms
    • garlic 5 pods
    • Basil full bunch
    • sugar 1 to 2 tsp
    • tomato sauce 4 to 5 tbsp
    • salt as per taste
    • red chilli powder 1 tbsp
    • Oregano 1 tbsp
    • White Sauce: 1 cup Milk
    • 1 tbsp maida
    • salt as per taste
    • Black pepper as per taste
    • cinnamon powder 2 pinch
    • butter 2 tbsp
    • Mozzarella cheese 1 tsp, grated
    • Cheddar cheese 1 tsp, grated
    • Parmesan Cheese 1 tsp, grated

    How to make Italian Rice

    1. Cook rice with four cups of water, salt, a pinch of oregano and black pepper powder. Put a tsp of olive oil while cooking. Can add chopped garlic also.
    2. Make red sauce: Heat some oil in a large pan. Add garlic and tomato puree, basil leaves, salt, red chilli powder. Cover and cook till done. Put tomato ketchup in the end.
    3. Make White Sauce: In a pan, put butter, let it melt then add maida and fry a little. Add a cup of milk and stir continuously. No lumps should be formed. Add salt, black pepper and cinnamon powder. Cook till bubbles forms. Do not over cook.
    4. Wash and chop all the vegetbales. Fry onions and saute all of them. Stir fry. Do not over cook. Add salt and pepper to taste.
    5. Grate up all the cheese.
    6. In a bake dish. Put the red sauce, then the rice, then the vegetables. On top put the white sauce and spread the grated cheese.
    7. In the oven bake the Italian rice at 180 degree centigrade for 15-20 minutes or till the cheese melts.
    8. Serve hot.

    My Tip:

    Any one variety of cheese can also be added instead of all three. Chicken slices can be added to the dish according to one's taste.
