ABOUT ROTI ENCHILADAS RECIPE

Easy and Healthy and Extremely Tasty Indo - Mexican Breakfast ready in a couple of minutes . This mix of veggies with homemade enchilada sauce is such a tasty morning treat .

Ingredients Serving: 4

  1. Homemade roti - 6 no
  2. Chopped mix veggie - 1 cup ( I used carrots, beans, capsicum and bell peppers )
  3. Finely chopped onion - 2 tabs
  4. Grated cheese - 1 cup
  5. Dry oregano - 1 teaspoon
  6. Enchilada Sauce .......
  7. Olive oil - 1 tablespoon
  8. Butter - 1 tablespoon
  9. All purpose flour - 2 tablespoons
  10. Cumin powder - 1 tablespoon
  11. Paprika - 1 tablespoon
  12. Garlic powder - 1 tablespoon
  13. Tomato puree - 1 cup
  14. Oregano - 1 teaspoon
  15. Salt to taste
  16. Sugar - 1 teaspoon

Instructions

  1. Heat olive oil and butter mix in a pan add flour , stir for one minutes until flour is light golden brown .
  2. Add tomato puree, oregano , salt, sugar , pepper powder , red chilli powder and cumin powder and mix it well making sure there is no lumps.
  3. Add 1 cup of water and boil over medium heat about 2 - 3 minutes, sauce should be pouring consistency .
  4. Heat oil in a pan add onion fry for few minutes then add all chopped veggies . Cook stirring until moisture has evaporated add salt and 2 tablespoons of enchilada sauce and mix well.
  5. Now fill the roti of 1/4 cup of filling , roll up tightly .
  6. Grease a microwave bowl with little bit of butter and spread some enchilada sauce in the base.
  7. Arrange the roti roll one by one.
  8. Spread some enchilada sauce to cover the roti roll and spread cheese to the top and sprinkle some oregano.
  9. Microwave for 1 - 1/2 minutes , cheese should be melted and little bubbly.
  10. Serve hot and Enjoyyyyyy :relaxed:
