ABOUT Panerai Panori RECIPE

Panerai or Panori is a traditional healthy breakfast recipe of Gujarat region . It s a lentil based steamed roti , gluten free ,rich in protein and spices . It is enjoyed with any type of traditional chutneys as an accompaniment or simply with desi ghee. Enjoy this healthy and delicious fulfilling your tummy , breakfast recipe which is slowly fading away from that region overshadowed by other street food gujaratis dishes.

Ingredients Serving: 4

  1. Whole green moong dal 250 g
  2. Ginger 1 inch approximately
  3. Garlic 3-4 cloves
  4. Green chillies 3-4
  5. Cumin 10g
  6. Heeng a pinch
  7. Salt as per taste
  8. Red chilly powder 1 teaspoon
  9. Coriander leaves 1 sprig
  10. Ghee pure 1 teaspoon

Instructions

  1. Wash and soak the required amount of moong whole lentil for 3-4 hours .
  2. Grind it in a mixer by adding very little water
  3. Add ginger, peeled garlic cloves, cumin , heeng , green chillies chopped ,red chilly powder in the mixer and grind all the ingredients into a fine thick paste..
  4. Remember we have to make a thick steamed roti so the consistency should be like a loose dough and not like a batter .
  5. Allow the mixture to stand for sometimes .
  6. Meanwhile in a pressure cooker or any open but cylindrical vessel add water to its boiling temperature ..
  7. Roll the dough on a flat steel plate and by tapping it with your hands make a thick roti .
  8. Remember do not grease the thaali . The dough will get adhered to the plate itself .
  9. Now place this thaali inverted on the hot steaming open cooker at high flame for approximately 7-8 minutes..Do not open to see in between.. The roti should get a continuous uprising steam from the boiling water.
  10. Take out your plate after the above mentioned time. You will find a lovely steamed roti ..
  11. The roti is ready..Apply desi ghee on it and sprinkle some red chilly powder on it.
  12. You can cut into pieces and enjoy this healthy treat with tomato peanut chutney or any other traditional chutney .
