ABOUT Asian Meatball Noodle Soup RECIPE

Pork meatballs simmer in chicken broth with cabbage, topped with delicious rice noodles, chili garlic hot sauce, and fresh cilantro for a deliciously healthy and easy soup. Traditionally made with pork meat, however you may choose to replace it with chicken or duck meat too

Ingredients Serving: 4

  1. for the meat balls:
  2. 2 cups green or Chinese cabbage , finely shredded and chopped
  3. 1 pound ground lean pork/chicken minced
  4. 2 green onions , finely minced
  5. 2 tablespoon fresh grated Bentong ginger
  6. 2 tablespoon soy sauce
  7. 2 tablespoon Chinese rice wine
  8. 1 tablespoon garlic , finely minced
  9. 1/2 teaspoon salt
  10. 1 teaspoon sesame oil
  11. 1/4 teaspoon white pepper
  12. for the soup:
  13. 2 cups green or Chinese cabbage , chopped
  14. 8 cups of chicken / vegetable broth
  15. 1 tablespoon soy sauce
  16. 8 ounces of rice noodles ;cooked and water drained well
  17. sesame oil to drizzle
  18. handful of chopped cilantro to garnish

Instructions

  1. for the meat balls:
  2. In a large bowl, combine all of the meatball ingredients and mix until well combined
  3. Cover and place mixture in refrigerator for at least 30 minutes.
  4. for the soup:
  5. In a large pot, bring broth to a simmer over medium heat. Reduce heat to low.
  6. Form meatballs into balls (about golf ball size) by hand and drop them into the hot broth
  7. Cook for 3-4 minutes, then gently stir in the cabbage. Cook for another 10-15 minutes, or until the meatballs and cabbage are fully cooked.
  8. Gently stir the soy sauce, into the broth. Keep warm until ready to serve.
  9. When ready to serve, place desired amount of cooked noodles in a bowl and ladle the broth and meatballs over them
  10. Drizzle a small amount of sesame oil and chopped cilantro on top.
