There is nothing more soothing than a bowl of soup. Red lentil veggie soup is a delicious and healthy soup prepared using lentil, veggies and spices. Lentils are good source of protein. U can serve it as a appetizer before the meal or satisfied your evening cravings. Add lemon juice before serving to relish it's taste.

Ingredients Serving: 4

  1. Split red lentil one cup
  2. One finally chopped onion
  3. Finally chopped garlic one tablespoon
  4. One finally chopped tomato
  5. One finally chopped carrot
  6. Finally chopped beans half cup
  7. Salt according to taste
  8. Black pepper powder half teaspoon
  9. Butter one tablespoon
  10. Bay leaf one
  11. Lemon one

Instructions

  1. Rince and drain the lentils a couple of time.
  2. Heat butter in a pressure cooker.
  3. Add bay leaf and garlic in it and saute for a while.
  4. Add onions in it and saute for two minutes.
  5. Add tomatoes in it and saute for a while.
  6. Add carrots, beans, Salt and pepper in it. Mix well.
  7. Add red lentil and three glass water in it.
  8. Cover the pressure cooker and cook for 3-4 whistles.
  9. Let the pressure released.
  10. Blend it with a blender until smooth puree.
  11. Strain it with a strainer.
  12. Add cream in it for creamy texture.
  13. It's ready. Add lemon juice in it. Mix well.
  14. Serve hot.
