Cheesy grilled tomato soup is perfect for this season.On a chilled winter's day nothing warms you up like a piping hot bowl of soup.This is a healthy and yummicious soup ,with goodness of garlic ,which prevents us from cold and cough .

Ingredients Serving: 3

  1. 500 gram tomato
  2. 1 whole garlic
  3. 1 whole onion
  4. 2 tablespoons chopped onion
  5. 2 tablespoons sliced spring onion, white portion
  6. 1 teaspoon black pepper powder
  7. 1 teaspoon dry basil leaves
  8. 1/2 teaspoon oregano
  9. 1/4 teaspoon sugar
  10. 5-6 tablespoons olive oil
  11. 1/2 teaspoon chilli flakes
  12. 1 teaspoon salt or as per taste
  13. 2 cups chicken stocks
  14. 1/2 cup grated cheese
  15. 2 tablespoons chopped fresh parsley


  1. Wash, peel and cut tomatoes into halves;also cut whole garlic and peeled onion into halves,place all of this vegetables on a baking tray ; sprinkle black pepper powder,dry Basil leaves, salt and olive oil thoroughly.
  2. Preheat oven for 15 minutes at 220°C and grilled it for 20-25 minutes .
  3. Heat oil in a heavy bottomed vessel ,add chopped onion saute it for couple of minutes,then add chopped spring onion.
  4. Add grilled vegetables, sugar , and cook it for a minute.
  5. Add chilli flakes,oregano and cook for 3-4 minutes.
  6. Then cool down it a little and make a paste in mixer .
  7. Again transfer the mixture in the same vessel , keep the gas in low flame ,add chicken stocks ,add salt if required and cook it for 10-15 minutes.
  8. Add grated cheese and put off the flame.
  9. Sprinkle chopped fresh parsley.
  10. Serve hot and enjoy.
