ABOUT Caprese Crostini RECIPE

Caprese crostini is the perfect breakfast or pick me up mood that takes a mere 10 mins to make. An open sandwich oozing melted mozzarella, blistered tomatoes and basil, drizzled with balsamic vinegar is just what you need to lift your mood or suppress those hunger pangs. PS: Perfect with soups!

Ingredients Serving: 2

  1. 4 slices brioche bread Use any bread of your choice
  2. 2 tsp butter
  3. 3 small tomato medium
  4. 1 cup mozzarella cheese
  5. 1/2 cup fresh basil leaves
  6. 4 tsp extra virgin olive oil
  7. a pinch salt 2 cloves garlic crushed
  8. fresh Black pepper powder
  9. 2 tsp balsamic vinegar to drizzle on (optional)

Instructions

  1. Start by getting the cheese and butter into room temperature before you start cooking. Start by cutting the tomato into thin slices. Heat up a grill pan, drizzle a little extra virgin olive oil and add the crushed garlic to it.
  2. Once the garlic is sauteed for 30 secs, add the tomato slices. Fry on high heat for 2 mins, sprinkle some salt and pepper and remove to a plate.
  3. for the grilled toast: Spread enough butter on the bread slices and put them on a griddle.
  4. Lay the mozzarella on it, and let it cook till the cheese has melted on low heat.
  5. Once the cheese has melted, remove to a plate, cut in half diagonally, add a few tomato slices to it, fresh basil leaves, more black pepper powder, drizzled of extra virgin olive oil
  6. Drizzle with a few drops of balsamic vinegar and serve immediately!
