Chicken Frankie

Ingredients to make Chicken Frankie

  • For tortillas:
  • maida 1/2 kg
  • oil 2 tbsp
  • salt as per taste
  • egg 1
  • For Filling:
  • chicken 1/2 kg
  • red chilli powder 1 tbsp
  • Paprika 1/2 tbsp
  • yogurt 1 cup
  • salt as per taste
  • Tandoori masala 1 tbsp
  • tomatoes 2 big
  • Schezwan chutney - 1 tbsp
  • mayonnaise - 1 tbsp
  • Shredded cabbage - 1 tbsp
  • Shredded capsicum - 1 tbsp
  • Cheese - as needed
  • red chilly sauce - as per taste
  • tomato ketchup - as per taste
  • Black pepper - 1 tsp
  • Mixed herb - 1 tsp

How to make Chicken Frankie

  1. Mix together maida, salt, oil and egg properly. Add water and make a soft dough. Cover it with damp kitchen napkin and let it rest for 1 hour.
  2. Take 2 same size balls of dough. Roll it in small pooris. Apply oil and dust dry maida on both pooris. Join both pooris facing oil side together and roll it in form of roti. It should not be very thick nor very thin.
  3. Take flat tawa, heat it properly. Now put roti on it. It should not cook completely, it should be lightly heated. Cover it under kitchen towel. Tortillas are ready.
  4. Filling: Take boneless chicken in small chunks, add salt, yogurt, red chilli powder, paprika, tandoori masala, mixed herbs, black pepper powder and marinate for half hour.
  5. Take deseeded and peeled tomatoes and puree them. Take 1 tbsp oil in pan, add tomato puree and cook for a minute. Now add marinated chicken, mix it nicely and cover lid. Cook on slow flame for 20 minutes or until done. Do not add water.
  6. Assembling: Mix mayonnise and schezwan chutney. Add little butter on tawa, put our ready tortilla and roast both sides. Spread mayonnaise and chutney mix, put chicken masala, shredded veggies on it. Apply spoonful of red chilly sauce and Ketchup on it. Lastly, add shredded cheese and sprinkle pepper and herbs and roll it. Serve it hot

My Tip:

Take care while cooking and folding tortilla so that it does not break.
