ABOUT Ghee Arbi Roast RECIPE

Winter is the time when we need to indulge in relishing ghee or butter in any form as it tends to keep us warm and comfortable. So here are some yummy small bites of arbi mixed with some spices and shallow fried in ghee. Enjoy them as snacks, appetizers or as a side dish with rice or chapati.

Ingredients Serving: 4

  1. 500 gms. arbi (colocasia) boiled & sliced
  2. salt to taste
  3. pinch of turmeric powder
  4. 1 tsp. red chili powder
  5. 1 tsp. sambar powder
  6. 1/2 tsp. coriander powder
  7. 1-2 sprigs curry leaves
  8. 2 green chilies, slit
  9. 1 tsp. lime juice
  10. 3-4 tbsp. ghee


  1. In a bowl, combine all the ingredients (except curry leaves, green chilies, lime juice and ghee) and leave aside to marinate for 30 minutes.
  2. Heat ghee in a pan and stir fry the marinated arbi on both sides till done. Add the curry leaves and green chilies.
  3. Saute for a few seconds and switch off the flame. Sprinkle lime juice and serve as an appetizer or as a side dish with rice or chapati.
