ABOUT Kerala style veg stew RECIPE

A combination of vegetable creamy curry prepared with thick and thin coconut milk and dry spices.

Ingredients Serving: 4

  1. 1  tbsp coconut oil
  2. 2 cloves / lavang
  3. 1 inch cinnamon / dalchini
  4. 2 pods Cardamom
  5. 1 bay leaf
  6. 2 onion sliced
  7. 10 french beans cut into 1inch
  8. 1 carrot chopped
  9.   1 potato cubed
  10. 10 florets cauliflower
  11. 2 green chillies slitted
  12. 1 inch Ginger julienne
  13. 1 Cup water
  14. 1 tsp Salt
  15. 2 cup coconut milk thin
  16. 1/2 cup coconut milk thick
  17. few curry leaves

Instructions

  1. In a large kadai heat 1 tbsp coconut oil and saute cloves, cinnamon,bay leaf and cardamom.
  2. Add onions and saute till they shrink slightly. do not brown the onions.
  3. Add  beans, carrot, potato, cauliflower, green chilli and  ginger. saute for a minute.
  4. Add 1 cup water, 1 tsp salt and few curry
  5. Cover and boil for 5 minutes or till vegetables are half cooked.
  6. Now add 2 cup coconut milk (thin consistency) and mix well.
  7. Cook till vegetables are cooked completely.
  8. Turn off the flame and add few curry leaves, 1 /2 cup thick coconut milk and mix well.
  9. Serve Kerala style vegetable stew with idiyappam or appam.
