Winter season is unbelievable without a slice of a carrot cake. It's really delicious and truly a healthy bite for everyone.

Ingredients Serving: 10

  1. self raising flour - 1 and 1/4 cup
  2. white oil - 2/3 cup
  3. raw sugar - 3/4 cup
  4. eggs - 3
  5. carrot - 1 (large)
  6. orange - 1
  7. raisins - 2/3 Cup
  8. baking soda - 1 teaspoon
  9. cinnamon powder - 1 teaspoon
  10. nutmeg powder - half teaspoon (optional)


  1. preheat the oven to 180 degree celsius temperature.
  2. grease with softened butter and line the base and sides of a cake tin with baking paper.
  3. sift the flour and baking soda together.
  4. lightly beat the eggs.
  5. grate the carrot finely.
  6. grate the whole orange zest.
  7. chop the raisins or if you wish leave the raisins as it is.
  8. mix the raw sugar, white oil and beaten egg in a large bowl.
  9. mix well everything.
  10. now mix with grated carrot, chopped raisins and orange zest.
  11. add sifted flour, cinnamon powder and nutmeg powder.
  12. stir to just combine. Then pour into the prepared pan.
  13. bake for 20 to 25 minutes. **Times may vary depending on oven**
  14. insert a skewer in centre of the cake and check if it comes out clean that means it's ready.
  15. let it cool slightly then turn out onto a wire rack to cool completely.
  16. enjoy the winter with a slice of carrot cake and a cup of coffee.
