ABOUT Koraishuti'r kochori, niramisha notun aloo'r dum ( in bengali style) RECIPE

This is a Bengali recipe specially preffered during winter. These are nothing but green peas kochoris. In these green peas kochori they generally preffered thd baby potato ( notun aloo) aloo dum which are specially harvested in winter. I prepare the aloo dum without onion and garlic. This is so delicious and mouthwatering combination.

Ingredients Serving: 5

  1. For Koraishuti'r kochori:
  2. Maida/all purpose flour-2.5 cup
  3. Koraishuti/ fresh green peas-1.5 cup
  4. Kalo jeera-1 tsp
  5. Ginger, green chilli paste-1 tsp
  6. Cumin powder-1/2 tsp
  7. Coriander powder-1/2 tsp
  8. Gram masala powder-1/2 tsp
  9. Oil -2 tsp
  10. Salt-1/2 tsp
  11. Sugar-1/2 tsp
  12. Oil for dip frying
  13. For niramish notun aloo'r dum:
  14. Notun aloo/ baby potatoes-250 gm
  15. Ginger,green chilli paste-1 tsp
  16. Curd -1/4 cup
  17. Cashew nuts-1/4 cup
  18. Turmeric powder-1/2 tsp
  19. Red chilli powder-1/2 tsp
  20. Coriander powder-1/2 tsp
  21. Cumin powder-1/2 tsp
  22. Salt as per taste
  23. Sugar-1/2 tsp
  24. Kasthuri methi-1 tsp
  25. Mustard oil-2 tsp
  26. Desi ghee-1 tsp
  27. Dry red chilli-1
  28. Chopped Coriander leaves-3 tsp
  29. Cumin seeds-1/2 tsp
  30. Bay leaves-2
  31. Cardamom-2
  32. Cinnamon-1 inch
  33. Cloves-2
  34. Water-1.5 cup

Instructions

  1. Preparation of Koraishuti'r kochori:
  2. Mix salt, sugar and oil in maida and mash it with your hand and then add water to make a smooth dough and keep it aside.
  3. Boil the green peas in water for approximately 3 minute.
  4. Then strain it and grind it with salt, sugar to make a paste.
  5. Heat a pan and put oil in it. Then add the kalo jeera and the ginger chilli paste along with coriander and cumin powder and saute it for a while and then add the green peas paste in it.
  6. Saute it for sometime till it becomes dry and keep them aside.
  7. Make equal size balls of the dough and also make equal sized balls of green peas masala paste.
  8. Then put the green peas inside the dough ball.
  9. Grease the rolling pin with oil and roll them as puri and then dip fry in oil.
  10. Now the Koraishuti'r kachori are ready. Serve hot with aloo'r dum.
  11. For Niramish notun aloo'r dum:
  12. Boil the potato with little in salt.
  13. Peel them and sprinkle some salt in it and keep them aside.
  14. Make a paste of curd and cashew nuts.
  15. Heat a pan and add cumin seeds,dry chilli along with the whole spices.
  16. Saute it for sometime and then add ginger chilli paste along with coriander, cumin, chilli, turmeric powder and salt in it.
  17. Then add the cashew curd paste in it and saute it for sometime and then add the potatoes and mix it well. Add sugar in it .
  18. Cover the lid and cook it for 10 minutes in low flame.
  19. Mix gram masala powder in it and cook another 5 minute by adding water in it .
  20. When it becomes little thick then switch off the flame and add ghee in it and sprinkle some coriander leaves in it.
  21. Now the Niramish Notun aloo'r dum is ready to serve.
  22. Serve hot with Koraishuti'r kochori.
