Ingredients to make Natun aloo dum

  • 500 grams small sized baby potatoes
  • For making a masala paste
  • 2 tomatoes
  • 1 inch piece ginger
  • 3 green chillies
  • 1 teaspoon jeera powder
  • 1/2 teaspoon haldi powder
  • salt to taste
  • 1 teaspoon sugar
  • For tempering
  • 1/2 teaspoon jeera whole
  • 1/4 teaspoon hing powder
  • 3 choti elaichi
  • 4 lavang
  • 1 inch piece dalchini
  • 2 tej patta
  • water as required
  • 4 teaspoons mustard oil
  • 1 bunch dhania patta for garnishing

How to make Natun aloo dum

  1. Boil and peel the potatoes.
  2. Make a paste of the ingredients mentioned above.
  3. Heat oil in a wok and put the ingredients mentioned under tempering.
  4. Now add the masala paste of tomato, ginger and green chillies. Cook for sometime.
  5. Add the potatoes. Now mix well.
  6. Add haldi powder , jeera powder , salt and sugar.
  7. Cook for a few minutes and add water as required for gravy. It is best if it just about sticks around the potatoes.
  8. Cook till done. Remove from heat. Garnish with dhania patta and serve with luchi or koraishutir kochuri.
