Chocolate! Chocolate!chocolate!A chocolate muffin with heavy cream. These muffins were absolutely amazing. They didn't need any oil / butter. I always using wheat flour for my baking. Give it a try, it is easy and quick. My kids loved it.

Ingredients Serving: 6

  1. Eggs 3
  2. Sugar 2/3 cup
  3. Salt 1/4tsp
  4. Vanilla extract 1tsp
  5. heavy cream 1cup
  6. Cocoa powder 1/3 cup
  7. Baking powder 1 1/2 tsp
  8. Wheat flour 1 2/3 cup
  9. Dark chocolate 120 gm
  10. Strong coffee 2tbsp
  11. Cashews 10 to 15

Instructions

  1. Preheat the oven to 180c( 350F)
  2. Line the muffin tin with paper cups
  3. Sieve the flour+ baking powder
  4. Cut chocolate in small chunks
  5. In a bowl beat egg , sugar,salt and vanilla extract
  6. Beat until creamy and pale yellow coloured
  7. Whip heavy cream until stiff peaks form
  8. Add cocoa powder over the whipped cream and mix to combine
  9. Add whipped cream to egg mixture and beat well
  10. Add coffee and mix
  11. Add flour and mix to combine
  12. Fold the chocolate chunks and Keep 2 tbsp chocolate for topping
  13. Spoon mixture into muffin cups
  14. Add the remained chocolate chunks on top of them
  15. Bake for about 25 minutes until a toothpick inserted in the center comes out clean
  16. Allow to cool a bit over a wire rack before serving
  17. The muffins don't stick to the muffin paper cups at all
