Malabar special rice which tastes best with Chicken , Mutton curry or any Coconut based curries and there is never reason required to gorge on this delicious rice

Ingredients Serving: 4

  1. 1.5 cups Basmati Rice
  2. 1 cup thinly sliced onions
  3. 3 cups water
  4. 3 cloves
  5. 3 Green Cardamom
  6. 1/2 tsp Ginger grated
  7. 1 bay leaf
  8. 1 inch cinnamon
  9. 1 tbsp raisins
  10. 4-6 tbsp Ghee
  11. 12-13 cashews
  12. Salt to taste
  13. Coriander leaves to garnish


  1. Clean and soak rice for 30 minutes. Drain excess water and keep it aside
  2. Heat ghee in a pan and the onions. Saute onions until crisp and brown. Drain and remove the onions. Keep it aside
  3. In same pan, fry cashews until golden brown, keep it aside. Now add raisins and saute until puffed up. Drain and keep it aside
  4. To same pan, add all whole spices and ginger. Saute until they splutter
  5. Add rice and saute for 3-4 minutes. Add water with salt and mix well. Water should be slightly salty
  6. Simmer, cover and cook until water is absorbed and rice is done
  7. Gently fluff the rice. Garnish the rice with fried cashews, onions, raisins and coriander leaves. Serve warm with curry and raita
