My makki steamed vadas with moong dhuli yellow dal tadka is basically a Rajasthani traditional winter comfort recipe which i have learnt from one of my neighbours . Its truly healthy as it is steamed and then baked for few minutes in the microwave .No deep frying is required and its accompaniment yellow dal is also very light on your tummy and the combo is very palatable too. Making of this traditional meal is very meditative and its has been always a comfort meal which one can always have as a breakfast, lunch or in the dinner.

Ingredients Serving: 4

  1. Makki flour 2 cups
  2. Methi leaves fresh 250 g
  3. Coriander leaves fresh 100 g
  4. Carom seeds 20g
  5. Asafoetida (heeng) a pinch
  6. Turmeric 1 teaspoon
  7. Green chillies 2-3 slit
  8. Red chilly powder 1 teaspoon
  9. salt as per taste
  10. Pure ghee 2 table spoon
  11. Yellow dhuli moong dal 200g
  12. Onion 1 medium sized chopped
  13. Dry dhania seeds 1 teaspoon

Instructions

  1. Take makki flour in a vessel , add chopped methi leaves , chopped green chillies , dhania seeds , heeng a pinch , salt as per taste , ghee one teaspoon and knead it into a dough by adding lukewarm water slowly and slowly but not all at once .
  2. Now roll them into balls and make a thumb print depression deeply in the centre to give the vadas look .
  3. Now keep it in the kadai on a hot boiling water and steam them for approximately 10 minutes ..
  4. Take them out and to make little crispy and brown, place them in the microwave for 5-7 minutes
  5. Take them out and apply ghee on the vadas and keep it aside .. vadas are ready to serve .
  6. Meanwhile cook presoaked yellow dal thadka in a desi ghee by giving jeera hing and chopped onion tadka . . enjoy these vadas dipped in the dal or simply with other accompaniments like any chutneys like coconut chutney or onion tomato chutney or simply with desi ghee . Enjoy this simple humble comfort meal..
