Ingredients Serving: 3

  1. Curd rice Recipe
  2. Cooked rice – 2 cups
  3. Curd – 1 to 1.5 cup
  4. Water – 1/2cup
  5. Salt – according to taste
  6. Onion – 1
  7. Coriander leaves – 3tspn
  8. Lemon juice – few drops according to taste
  9. For Tadka:
  10. Mustard seeds – 1/4th tspn
  11. Curry leaves – 1sprig
  12. Red chilly – 1
  13. Urad dal – 1/2tspn
  14. Potato Fry Recipe
  15. Boiled potatoes – 4
  16. Green chillies – 4 to 5
  17. Curry leaves – 2 sprig
  18. Onion – 1
  19. Mustard seeds – 1/2tspn
  20. Ginger – half inch piece
  21. Turmeric powder – 1/2tspn
  22. Chilly powder – 1/4tspn (optional)
  23. Salt – according to taste
  24. Coriander leaves – 1tspn
  25. Lemon juice – 1tspn

Instructions

  1. Curd rice Recipe
  2. In a bowl add cooked rice, yoghurt, water and salt. Mix well
  3. In a tempering vessel heat few tspns of oil. Add mustard seeds, once it splutters add urad dal, red chilly broken to two pieces and curry leaves. Fry till aromatic on low flame. Add this to rice.
  4. Also add finely chopped coriander leaves, few drops of lemon and onion cubes. Adjust seasoning, mix well.
  5. Serve cold and fresh.
  6. Potato Fry Recipe
  7. In a non stick kadai heat few tspns of oil. Add mustard seeds. Once they crackle add finely chopped ginger pieces, onion pieces, green chilly slices and curry leaves. Fry till onions get translucent. Add turmeric powder and salt.
  8. Mix well. To this add small size potato pieces. Cook on medium flame mixing it well to coat the onion and spice mixture. Cook for 8 to 10 minutes. Garnish with finely chopped coriander leaves and drizzle of lemon juice.
  9. Serve hot with dal chawal/ roti/ phulkas.
  10. Note: Spices and ingredients can be adjusted according to your preference. Chilly powder can be added is you want more heat. Its optional though.
