A comfort food is that,which is always related with our emotion,childhood,and also linked to a special person like mother or grandmother and sometimes from a special place also. For me a comfort food is also that which i love to cook and love to eat. When i am thinking about some comfort food as an odia the first thing comes to my mind is Pakhala( Water Rice) or a full Pakhala platter. Which i can eat anytime,anywhere and in any season. Pakhala is a very popular dish of odisha which is cooked rice fermented in water or deeped in water. There are lot of varieties in pakhala like Basi Pakhala( Fermented Water Rice), Saja Pakhala(Fresh Water Rice),Jeera Pakhala(water Rice with roasted cumin seeds powder),Dahi Pakhala(Water Rice with curd) and many more.... And the best part of this dish which i like most is in Odisha we can find this dish in every household whether they are rich or poor.... So here is my pakhala platter with some desi style side dishes . Basi Pakhala( fermented Water Rice) with Machha Bhaja(Shallow fried fish),Sajana chuin aloo besara.(Drumsticks and potatoes cooked in mustard paste),Aloo bharta(Mashed potato),Baigana bharta(mashed roasted brinjal),Badichura(sundried lentil dumplings crumble),Methi saga Bhaja(Stir fried fenugreek leaves),kalara chips(Bitter gourds chips)

Ingredients Serving: 2

  1. For Pakhala-
  2. 2 cups cooked Rice.
  3. 3 cups water
  4. 4 tablespoons curd
  5. salt as per taste
  6. For sajana chuin aloo besara.
  7. 4 no drumsticks
  8. 2 medium size potatoes
  9. 1 tablespoon mustard seeds
  10. 1 teaspoon cumin seeds
  11. 1 red chilli
  12. 5 garlic cloves
  13. 1 teaspoon turmeric powder
  14. 2 tablespoon mustard oil
  15. 1 teaspoon panch phutan
  16. salt as per taste
  17. Half cup water
  18. Machha Bhaja
  19. 4 -5 pieces of rohu fish
  20. 1 teaspoon turmeric powder
  21. 1 Teaspoon Chilli Powder
  22. 1 teaspoon Lemon juice
  23. 1 teaspoon salt
  24. For methi saga
  25. 3 cups chopped fenugreek leaves
  26. 1 medium size potato chopped in small pieces
  27. 4 garlic cloved ,crushed
  28. 1 green chilli
  29. 1 teaspoon panch phutan
  30. 2 teaspoon oil
  31. salt as per taste
  32. Aloo bharta
  33. 4 medium size boiled potato
  34. 2 tablespoon finely chopped onion
  35. 1 finely chopped green chilli
  36. 1 teaspoon finely chopped coriander leaves
  37. 1 teaspoon mustard oil
  38. salt as per taste
  39. Baigana bharta
  40. 2 medium size brinja roasted
  41. 2 tablespoon finely chopped onion
  42. 1 green chilli finely chopped
  43. 1 teaspoon coriander leaves finely chopped
  44. 1 teaspoon mustard oil
  45. salt as per taste
  46. Badi chura
  47. 10 no Badi
  48. 5 garlic clove
  49. 1 green chilli
  50. 2 teaspoon mustard oil
  51. salt as per taste
  52. Kalara chips
  53. 4 medium size bitter gourd cut into thin round pieces
  54. 1 teaspoon turneric powder
  55. 1 teaspoon red chilli powder
  56. 1 teaspoon salt
  57. Oil for Deep frying


  1. Pakhla
  2. Add water to the cooked rice and leave it for 5 to 6 hour or overnight.
  3. At the time of serving add curd and salt as per taste.
  4. Pakhala is ready
  5. Sajana chuin aloo besara
  6. Cut the drumsticks and potatoes in to fingure size pieces.
  7. Make a fine paste of mustard seeds cumin seeds garlic and red chilli
  8. Boil half cup water in a pan,put the drumsticks and potato pieces add the mustard paste,turmeric powder and salt .
  9. Cover it and allow to cook for 10 minutes on medium flame
  10. After it done keep it aside.
  11. Heat mustard oil in a pan add panch phtan
  12. Then add the boil drumsticks and potatoes and till becomes golden brown
  13. Saja chuin aloo besara is ready
  14. Machha Bhaja
  15. Clean the fish properly with water
  16. Add sal,t turmeric powder,chilli powder,lemon juice and mix well
  17. Leave it for 15 minutes
  18. Heat oil in a pan and shallow fry the fish till it becomes golden brown
  19. Machha Bhaja is ready.
  20. Aloo Bharta
  21. Mash the boil potatoes,add onion green chilli,coriander leaves, mustard oil , salt and mix it properly.
  22. Aloo Bharta is ready
  23. Baigana Bharta
  24. Peel the roasted brinjal and mash it. Then add onion ,green chilli,coriander leaves ,mustard oil,salt and mix it properly.
  25. Baigana Bharta is ready
  26. Badi chura
  27. Heat oil in a pan, shallow fry the badis till becomes golden brown
  28. Add fried badis ,green chilli,garlic cloves,salt in a blender jar and pulse it for 3 to 4 times.
  29. Badi chura is ready
  30. Methi Saga Bhaja
  31. Heat oil in a pan add panch phutan,green chilli and crushed garlic
  32. Then add the potato pieces and cook it for 1 to 2 minutes
  33. Then add fenugreek leaves salt and fry for 2 to 3 minutes
  34. Methi saha bhaja is ready
  35. Kalara chips
  36. Put the bitter gourd pieces in to a bowl,add turmeric powder,chilli powder ,salt and mix well.
  37. Leave fof 15 minutes
  38. Heat oil and deer fry the bitter gourd pieces till becomes crispy
  39. Kalara chips is ready.
