ABOUT Nizami Biryani RECIPE

Nizami Biryani...A delicacy from Hyderabad ...The city of Nizams. It is a royal dish...layered with mutton and rice and cooked with authentic flavors from the Nizami culture. It is cooked by using the everyday spices that we can easily find in our kitchen . Even though the spices used are very regular but the taste is irresistible and heavenly and just leaves you wanting for more . Whenever I have surprise guests at home for lunch or dinner and I need to cook something special for them in short time, Nizami biryani is the first thing that comes to my mind , or when I have to do house cleaning or attend an open day at kids school , this dish gives me comfort and wholesomeness for lunch /dinner

Ingredients Serving: 2

  1. 250 grams Basmati rice
  2. 250 grams mutton(boneless or with bones )
  3. 2 Potatoes
  4. 5 big onions
  5. 100 grams curd
  6. 6 big tomatoes
  7. 1 tbsp ginger paste
  8. 1 TBSP GARLIC PASTE
  9. 2 tsp red chille powder
  10. 2 tsp turmeric powder
  11. 2 tsp garam masala powder
  12. 2 green chillies
  13. salt as per taste
  14. 4 tbsp oil
  15. 2 Bay Leaves
  16. 1 tsp zeera
  17. 1 tsp shah zeera
  18. 4 cloves
  19. 10 pepper corns
  20. 1 inch cinnamon stick
  21. 1 green cardamom
  22. Dry fruits like almonds and cashews
  23. Pinch of yellow colour
  24. Juice of 1 lemon
  25. Handful of chopped coriander and mint leaves
  26. Half cup milk
  27. Water as needed

Instructions

  1. Wash rice nicely with light hands and soak if you have time or else directly keep on gas for boiling by adding salt and shah zeera. Drain excess water and keep aside.
  2. Whole the rice is boiling, we can prepare our mutton masala for the biryani.
  3. In a pressure cooker, heat 3 tbsp oil....Add peeled potato pieces ,fry on high flame and remove from oil and keep aside
  4. In same oil, add 2 sliced onions and fry until light brown, remove from oil and keep aside.
  5. Now add all the whole spices in same oil and let them splitter for a minute.
  6. Add 3 chopped onions and fry until pink.
  7. Now add mutton pieces , ginger garlic paste , red chille powder, turmeric powder, garam masala powder, green chille slits, salt.
  8. Cook on high flame for 2 minutes stirring continuously with spoon...Then add little water and cook again for a minute.
  9. Now add sufficient water so that the mutton tenders, close the lid and pressure cook for 2 whistles on high flame and 2 whistles on low flame.
  10. To this meat, add chopped tomatoes and curd .
  11. Cook until the excess water in masala dries up a bit, add pitatoes and cook for 2 minutes, then add almonds and cashews cut into halves.
  12. Now your Rice and mutton masala is ready to be layered for authentic Nizami Biryani .
  13. Take a broad nonstick vessel or an aluminum pot, spread mutton masala evenly, sprinkle lime juice all over, spread coriander kintu leaves and then spread fried onions all over .
  14. Now evenly spread rice over the mutton layer , sprinkle milk mixed with yellow colour.
  15. Lastly pour remaining hot oil all over the rice.
  16. Cover and cook for 5 minutes and your mouth watering Nizami biryani is ready to be finished in minutes
