Ingredients Serving: 8

  1. 2 large oranges, chopped with the skin
  2. 4 eggs, separated
  3. 200 grams finely ground white sugar
  4. 250 grams ground almonds
  5. Dried, chopped apricots as many you want to use
  6. 1 tsp baking powder

Instructions

  1. Put the chopped oranges without the seeds but with the skin into a pan with 2-3 tbsp of water and cook it covered, for 20-25 minutes.
  2. Preheat the oven to 160 degrees centigrade and use a springform cake tin lined with parchment paper.
  3. Beat the egg whites with half the sugar till stiff peaks are formed.
  4. Beat the yolks with the rest of the sugar.
  5. Grind the softened oranges into a thick paste (with some chunks, not too fine).
  6. Fold it into the yolk-sugar mix.
  7. Fold the ground almonds into the above mix.
  8. Slowly transfer and fold in the beaten egg whites into this mix.
  9. Transfer this into the springform cake tin. Bake for 50-55 minutes.
  10. Take it out of the springform tin after it cools off completely.
  11. Garnish with dried apricots and sliced almonds.
