  1. Orange Cake Recipe:
  2. Grease the baking pan with butter and some all purpose flour and keep aside for later use.
  3. Preheat the oven to 180 degrees C.
  4. In a mixing bowl, cream the butter and sugar well until pale and thick. This will take some time. Add eggs one by one and then add the orange zest and mix well.
  5. Sieve the all purpose flour, salt and baking powder together. Now add this to the butter and eggs mixture little by little and beat well. Now add the orange juice till it is incorporated well.
  6. Transfer to baking bowl and bake for 35 to 40 minutes at 180 degrees C.
  7. Insert toothpick and if it comes out clean is an indication that cake is fully baked. Remove from oven and leave it on cooling rack for 15 to 20 minutes before de moulding.
  8. Fresh Cream and Cream Cheese Frosting:
  9. Whip the fresh cream till you get stiff peaks. Set aside. In another bowl whip cream cheese, sugar, salt and vanilla essence to smooth mixture. Add whipped cream using spatula and fold in both mixture. Transfer to icing bag.
  10. Divide the cake to two layers. Spread frosting on each layer making sure cake is covered evenly. Make 2 or three layers according to your choice.
  11. Finally spread frosting on top most layer and decorate cake with rosettes and sprinklers. Refrigerate for a while before cutting.
  12. Please Note: While adding orange zest in cake batter, avoid the white skin of orange. White skin under zest lends bitter.
  13. While preparing the frosting add salt and vanilla essence to cream cheese and never to whipped cream.
