About Chicken Parmagiana Recipe

It is a popular Italian American dish which kids love to eat. It consist of pounded, flavoured,crispy Fried chicken pieces topped with spicy tomato salsa with slices of mozzarella served on bed of spaghetti tossed in olive oil and fresh tomato salsa

Chicken Parmagiana

Ingredients to make Chicken Parmagiana

  • chicken breast 4
  • flour 4 tbsp
  • egg 2
  • Milk 3 tbsp
  • ginger garlic paste 1tbsp
  • Black pepper 1tbsp
  • coriander leaves chopped 2tbsp
  • salt 2 tsp
  • red chilli flakes 1 tbsp
  • Oregano 1 tbsp
  • vinegar 1tbsp
  • Flavoured bread crumbs
  • Fresh bread crumbs 2 cup
  • red chilli flakes 1 tbsp
  • Oregano 1 tbsp
  • oil for frying 2 cup
  • tomato sauce
  • Olive oil 3 tbsp
  • garlic crushed 2 tbsp
  • onions 2 chopped
  • capsicum 2 chopped
  • tomatoes 6 big(blanched, peeled,chopped)
  • tomato puree 3/4 cup
  • tomato sauce 3 tbsp
  • sugar 1 tbsp
  • Black pepper powder 1tsp
  • salt 1.5 tsp
  • red chilli flakes 1 tbsp
  • Mixed herbs 1 tbsp
  • Soya sauce 1 tbsp
  • Tomato carrot soup or chicken soup 1 cup ( optional)
  • Spaghetti 1 packet
  • oil 1 tsp
  • salt 1 tsp
  • Mozerella cheese slice 6
  • Spring onions green 2 tbsp chopped

How to make Chicken Parmagiana

  1. Slice chicken in thin strips and keep in between sheets of plastic paper. Pound with a rolling pin so that it becomes thin and flat
  2. Mix chicken with ginger garlic paste, red chilli flakes, black pepper powder, Salt, vinegar, coriander leaves
  3. Marinateand keep aside
  4. In a bowl add eggs, milk and a pinch of salt and pepper powder and whisk
  5. Flavour the bread crumb with powder spices
  6. Dip the chicken pieces in flour, then in egg and coat In bread crumbs
  7. Deep Fry it on medium heat till golden and crispy
  8. Heat olive oil in a Wok and add minced garlic
  9. Add chopped onions and saute for few minutes
  10. Blanch, peel and chop the whole tomatoes
  11. Add tomatoes, tomato sauce, tomato puree, mixed herbs, red chilli flakes, black pepper powder, sugar, Salt, soya sauce, and cook till thick
  12. Add fresh tomato carrot soup ( optional) or chicken stock if you want instead of water
  13. Add capsicum and cook till thick
  14. In a baking dish put a little sauce and arrange the fried chicken pieces on the sauce
  15. Put more sauce on top of chicken pieces and arrange a slice of mozzarella too Sprinkle spring onions too
  16. In a preheated oven at 180 c bake for 15 minutes only
  17. Spaghetti
  18. Boil spaghetti in a big pan with little salt and oil till it is soft
  19. Drain in a sieve
  20. In a Wok add the boiled noodles ,olive oil, 3/4 cup of tomato salsa and toss
  21. Add chopped coriander leaves or spring onions of your choice
  22. Enjoy with baked saucy chicken

My Tip:

I always add soup for my kids as they enjoy the food without any fuss
