ABOUT Chicken and corn Cutlets with Cheese Crowns RECIPE

Style up your Cutlets with these cheese crowns for an elegant look that will bring your kids to the table. I got the inspiration for these from Your Food Lab. I have used mozeralla cheese to make the crowns. You could use cheddar as well. These Cutlets are tender and juicy with the right mix of potatoes, chicken and corn. Healthy and tasty!

Ingredients Serving: 3

  1. 250g boneless chicken, cooked and shredded
  2. 1 large potato, boiled and mashed
  3. 1 cup sweet corn kernels
  4. 2 tbsp Red Chili Powder
  5. 1/2 tsp turmeric powder
  6. 1 tsp cumin powder
  7. 2 tbsp chopped coriander leaves
  8. Salt to taste
  9. 1 egg, beaten with salt and pepper
  10. 1 cup breadcrumbs
  11. Oil for frying
  12. 1 cup mozerella cheese
  13. 1 tbsp cheese
  14. 1 tbsp tomato ketchup

Instructions

  1. Chop corn kernels in a chopper for 2 seconds. It shouldn’t become paste.
  2. Mix shredded chicken, mashed potatoes, corn, red chili powder, cumin powder, turmeric powder, salt and coriander leaves. Mix well.
  3. Form Cutlets of medium size from the mixture. Dip in egg mixture and coat with bread crumbs.
  4. Fry in hot oil till golden brown. Remove and place on an absorbent paper.
  5. To make cheese crowns : Heat a pan, sprinkle some mozzarella cheese on it. As the cheese melts, it sticks to one another.
  6. Gently lift the cheese from one edge of the pan and place it on a narrow inverted cup. Place another cup on it to give it a shape of a crown. Let stay for 15 seconds.
  7. Lift it off the cup. Your cheese crowns are ready.
  8. To serve, place the cutlet on a plate. Spread cheese and drizzle some ketchup on the cutlet. Place crown on the cutlet and serve.
