Fruity and colorful Strawberry-Lemon Donuts are fun treat for any time of the day! I wanted to make them with whole wheat flour and they turned out amazing.

Ingredients Serving: 4

  1. Dry mixture: 500 grams whole wheat flour
  2. 2 tablespoons milk powder
  3. 12 grams instant dry yeast
  4. 2 tablespoons Oil or ghee for kneading
  5. Brine: 200 ml water
  6. 60 ml honey
  7. 40 grams brown sugar
  8. 2 tablespoons lemon juice
  9. Glaze: 3/4 cup strawberry puree
  10. 2 teaspoon lemon juice
  11. 1 +1/2 cup powdered sugar
  12. 1 teaspoon vanilla essence
  13. 1-2 teaspoon water if required
  14. Some colourful sprinklers

Instructions

  1. Cook 3/4 cup strawberry puree with 2 tablespoons brown sugar
  2. Doughnuts: Prepare brine by mixing the ingredients.
  3. Dissolve the sugar completely in the brine. Heat if required. Let it come to luke warm temperature.
  4. In a large mixing bowl add flour, make a well in the centre and add Yeast and 1 tablespoon ghee.
  5. Knead a soft dough using the Luke warm brine. Add some more water if required.
  6. Transfer the dough on a greased kitchen counter, use the remaining 1 tablespoon ghee while doing this.
  7. Knead the dough till it becomes smooth and stops sticking to your hands.
  8. Keep in a greased bowl. Cover with damp kitchen towel.
  9. Let it rest for 45 minutes. Or until dough doubles in size.
  10. Line baking trays with parchment paper.
  11. Roll the dough into a thick circle, using little flour. Keep the it 1/2 inch thick.
  12. Cut doughnuts using a doughnut cutter or a cookie cutter.
  13. Place on the lined tray. Cover with cloth and leave for second rise around 20 minutes.
  14. Once done the doughnuts will stop sticking to the parchment paper and they will come out very easily.
  15. Glaze: Also prepare easy and yummy strawberry glaze till the doughnuts are in the oven.
  16. Mix the ingredients for glaze except for the sprinklers.
  17. Now comes the most stress-busting part, that is to glaze and decorate the warm doughnuts (Kids love to help me in this part of the preparation)
  18. Dip the doughnuts in the glaze and keep over a wire rack. My kids like when dipped only once in the glaze. But for better application you can do it twice and thrice.
  19. Sprinkle your favourite colourful sprinklers.
  20. Enjoy with loved ones.
