Ingredients Serving: 3

  1. Basmati rice 500grams.
  2. Mutton with bones 400grams.
  3. Ghee 2table spoon.
  4. Oil 1/2cup.
  5. Onion 3nos.
  6. Ginger -garlic paste 2table spoon.
  7. Curd 1/2cup.
  8. Green cardemom powder 1table spoon.
  9. Mace powder 1tea spoon.
  10. Red chilli powder 1table spoon.
  11. White pepper powder 1table spoon.
  12. Blach pepper powder 1tea spoon.
  13. Salt for mutton 1table spoon or as per taste.
  14. Salt for rice 1tea spoon.
  15. Whole Spices:
  16. Greencardemom 2-3nos.
  17. Cloves4-5nos.
  18. Bay leaves 2nos.
  19. Cinnamon stick 2"piece.
  20. Black cumin seeds 1tea spoon.
  21. Staranis 1no.
  22. Few saffron strands soaked in 1/2cup milk.
  23. Green chillies3-4nos.
  24. Ginger julians 1table spoon.
  25. Fresh cream 1/2cup.
  26. Lemon juice 2table spoons.

Instructions

  1. Wash basmati rice,soak for 30minites.Keep aside.
  2. Heat oil in a heavy bottomed pan,fry thinly sliced onion till golden brown.
  3. Take out half onion.
  4. Put mutton in remaining half onion,stir well.
  5. Add curd and ginger garlic paste.Stir well and cook on high flame till water dries.Add salt.
  6. Add all powdered spices and 1table spoon lemon juice.
  7. Stir well till flavour of cardemom and mace can be feel,add 3cups water.Boil.
  8. Cover the pan and cook on low flame for 40-45 minutes or till mutton is soft.
  9. Do not dry the gravy of mutton,remove frome flame and keep aside.
  10. Soak saffron in milk and keep aside.
  11. Boil 4cups water with whole spices , salt and 1table spoon lemon juice.
  12. Add rice and cook till 80%done.Drain the rice.
  13. Now put cooked mutton on flame,add half of boiled basmati rice on mutton.Addcream,ginger julians,green chillies and saffron milk on rice.Add some fried onion also.
  14. Cover from remaining rice Add ghee on top..
  15. Take 1cup wheat flour,make a dough.Cover the pan with lid and seal the pan from dough as shown in picture.
  16. Cover the pan and cook for 5minutes on medium flame then cook for 7-8 minutes on low flame.
  17. Remove lid,garnish with fried onion and serve.
