A traditional and delicious dum biryani, loaded with vegetables, cooked in curd and spices.

Ingredients Serving: 8

  1. Basmati Rice - 1 cup
  2. carrots [chopped] - 1/4 th cup
  3. capsicum [chopped] - 2 tbsp
  4. beans [chopped] - 1/4 th cup
  5. peas - 5 tbsp
  6. Onion [sliced] - 2
  7. Ginger garlic paste - 2 tsp
  8. Salt
  9. Garam masala powder - 1/2 tsp
  10. Biryani masala - 1 tsp
  11. Saffron strands in milks - 2 tbsp
  12. Curd - 1/4 th cup
  13. Whole garam masala [cinnamon, cloves, cardamom, bay leaf]
  14. Ghee/refined oil


  1. Heat a heavy bottomed pan with ghee/oil. Then add the sliced onion and saute until transparent. Then add the ginger garlic paste and saute further.
  2. Then add the chopped vegetables, along with the powdered masalas, salt and stir. Then add the curd and saute further until the masala leaves oil.
  3. Meanwhile, wash the basmati rice and cook with the whole garam maslalas , salt and lot of water. Once the rice is half cooked, strain the water.
  4. Now on a low flame, put back the kadhai with the vegetables, now layer all the rice on it, then spread the saffron in milk, close the lid and cook for 30 minutes. rest and serve.
