Heat a pan put sugar and add water, saffron and add cardamom powder and cook till sugar is mixed and melted, it should be thick but make sure it's not too thick. Once you're satisfied with its consistency keep it aside
In a mixing bowl put 1/4 cup ghee, 1/4 cup of water and dahi and mix well
Now add maida baking soda and mix well and make a dough out of it and apply oil to it and keep it aside for 5-7 minutes
Now roll the dough with a rolling pin and then fold it, repeat this procedure 2 times ( Roll it and fold it)
Now cut it into pieces and take the piece on your palm and make a ball of it and then press it in the center
Now balushahi is ready to be fried
Now take a kadhai put ghee in it and heat it and drop balushahi to fry them, fry them on low flame and flip sides in 3-4 mins and cook till golden and crispy
Now put these balushahi in luke warm sugar syrup that we made earlier for 2-3 mins and then transfer to plate.
Now balushahi is ready, Garnish with Chopped Pista!
