Ingredients Serving: 2

  1. Sweet corn - 1 - cup
  2. Corn flour - 3 - tbsp
  3. Rice flour - 2 - tbsp
  4. Water - 1 - glass
  5. Finely chopped Onion(optional) - 2 - tbsp
  6. Coriander leaves(optional) - 1 - tbsp
  7. Spring Onion chopped(optional) - 1 - tbsp
  8. Lemon Juice - 1 - tbsp
  9. salt as to taste - 0 - 0
  10. Oil for deep fry - 1 - cup
  11. Red chili powder - 1/2 - tbsp
  12. Chat Masala - 1/2 - tbsp
  13. Black Pepper Powder - 1/2 - tbsp

Instructions

  1. To a bowl add corn, salt, black pepper powder and water as required to boil. Boil in medium flame for 3 minutes.
  2. Strain then rinse it with cold water.the moisture should be there but not too watery, so strain completely then immediately transfer to a bowl.
  3. Now add Corn flour, rice flour and mix well with a spoon/fork.The mixture should be dry and not sticky.
  4. Toss it well for remove excess flour.
  5. Heat oil in a pan for deep fry, once oil is hot add a small batch of flour coated corn ,keep covered for few second.corn may pop out initially so cook carefully..
  6. After few second remove the lid and and mix it slowly ,so that it doesn't stick together.
  7. Fry it until it golden and Crispy.Then remove and drain excess oil.Repeat with next Batch.
  8. Transfer fried corn to a mixing bowl, add red chilli powder, chat masala, little salt,(chopped coriander leaves, chopped onions- optional) lemon juice. Give a quick toss and serve immediately.
  9. Crispy Corn is Ready to serve.
