Red Thai Chicken Curry

Ingredients to make Red Thai Chicken Curry

  • 500 Grams boneless , skineless chicken breasts
  • 1 Tablespoon Thai red curry paste
  • 500 ml coconut milk
  • 1 Tablespoon fish sauce(Can be skipped)
  • 3 Tablespoons of cooking oil
  • 2 teaspoons ginger garlic paste
  • 1 Teaspoon Red Chili powder(Adjust according to your spice preference)
  • 1 Teaspoon Curry powder
  • 1 tablespoon black pepper powder
  • Few small pieces of brocolli
  • 2 carrots sliced or chopped into small pieces
  • 1 Small bell pepper ( I used 1/2 red and 1/2 yellow) sliced thin
  • 1 medium onion chopped fine
  • Small bunch of chopped coriander leaves

How to make Red Thai Chicken Curry

  1. Wash and cut chicken breasts into small pieces.
  2. Make a paste of fish sauce, coconut milk and red curry paste. Stir it well and remove all the lumps.
  3. Heat a tablespoon of oil in a medium saucepan kept on medium high heat and add chicken pieces.
  4. Sprinkle black pepper powder. Stir in between. Cook till chicken is nice and soft.
  5. Remove the cooked chicken pieces on a plate.
  6. In the same pan add the remaining oil and sauté ginger garlic paste on medium heat until raw smell goes away.
  7. Add chopped onions and fry till translucent.
  8. Add all the veggies like broccoli, carrots and bell peppers and cook them covered for about 5 minutes.
  9. Remove cover and mix in cooked chicken.
  10. Add the prepared paste and mix well.
  11. Add red chili powder, mix and once the mixture comes to rolling boil, switch off and remove from heat.
  12. This curry tastes excellent with hot steamy rice.
