ABOUT Bharwa Baingan RECIPE

Brinjal stuffed with coconut, with a tangy flavour.

Ingredients Serving: 4

  1. 8 small eggplants or brinjal (baingan)
  2. 2 medium size chopped onion
  3. 2/3 cup grated fresh coconut
  4. 4-5 cloves
  5. 1 tsp jeera
  6. 4-5 pepper corns
  7. salt as per taste
  8. 1 tsp turmeric powder
  9. 1 tsp tamarind paste
  10. 2 tsp chopped coriander


  1. In a pan, add 1 tbsp oil, then add cloves, jeera and peppercorns. Saute for a bit, then add in the onions and coconut. Fry till golden brown.
  2. Let this mixture cool and then grind into a fine paste. You can add a little water if required.
  3. Add turmeric powder, tamarind paste, salt and chopped coriander. Mix well.
  4. Slit each brinjal lengthwise with the stem intact. Stuff each generously with the above mixture.
  5. Shallow fry till they are soft and evenly cooked.
