Ingredients to make Egg Handi

  • 6 eggs
  • 2 large onions
  • 2 large tomatoes
  • 2 green chillies
  • 1 tsp ginger garlic paste
  • 1 tsp coriander chutney
  • salt as per taste
  • 1/2 tsp red chilli powder
  • 1 tbsp coriander powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp garam masala powder
  • 2 tbsp fresh cream
  • 3 tbsp butter

How to make Egg Handi

  1. Boil 4 eggs. Fry these boiled eggs in 1 tbsp butter and keep aside.
  2. In a same pan, add one more tbsp butter and fry chopped onions on a high flame till translucent.
  3. Add all the spices, green chili and ginger garlic paste except garam masala powder. Fry for 30 seconds.
  4. Add chopped tomato and green chutney. Fry for 2 more minutes or till it cooks.
  5. Add 100 ml water and cook for 1 more minute.
  6. In a separate pan, heat 1 tbsp butter and prepare 2 half fry eggs.
  7. Add cream, garam masala powder and half fry eggs to the gravy and mix well.
  8. Add in the boiled fried eggs to the gravy and garnish with fresh cream and coriander.
