Surprise Chocolate Bombe

Ingredients to make Surprise Chocolate Bombe

  • 1 1/2 cup milk chocolate
  • 1/2 cup dark chocolate
  • 1 tsp instant coffee
  • 2 eggs
  • 1 egg yolk
  • 1/2 cup castor sugar
  • 1 cup whipping cream
  • 100 grams strawberry
  • 30 grams castor sugar
  • 10 ml lime juice

How to make Surprise Chocolate Bombe

  1. For semifreddo, place eggs, egg yolk and sugar into a bowl and set over a saucepan of simmering water.
  2. Whisk fast until it becomes thick and double in size. It takes about 8-10 minutes.
  3. Whisk in coffee until mixed and remove from heat. Set aside to cool.
  4. Melt the chocolate using double boiler and in separate bowl, beat the cream until soft peaks.
  5. Fold the chocolate in cream and gently fold this chocolate cream mixture into egg coffee mixture.
  6. Transfer this to dome moulds and place it in the freezer until set.
  7. For surprise filling: Blend strawberry, castor sugar and lemon juice. Transfer this into a piping bag.
  8. Take chocolate coffee semifreddo out and using a melon baller remove the centre from the 2 domes.
  9. Pipe some strawberry filling into each scooped centre of semifreddo. Return domes to freezer for about 5 minutes.
  10. For garnishing: Melt the dark chocolate using double boiler and set aside to slightly cool.
  11. Remove the 2 domes and join them together using some melted chocolate. Seal them properly to get a sphere.
  12. Dip this sphere into melted chocolate and gently rotate the sphere using a spoon to coat completely.
  13. Place the sphere into the freezer for 10 minutes to set.
  14. The surprise chocolate bombe is ready. Serve with strawberry icecream.
