ABOUT Gur wale chawal (Jaggery rice) RECIPE

Cooked rice, tossed with jaggery, coconut and nuts.

Ingredients Serving: 4

  1. Rice 2 cups
  2. Jaggery 1/2 kg (if powder 2 cups)
  3. Water 2 cups
  4. Bay leaves 2
  5. Black cardamom 2
  6. Laung 4
  7. Almond slices 2 tbsp
  8. Kishmish 2 tbsp
  9. Sliced coconut 2 tbsp
  10. Saunf (fennel seeds) 1 tbsp
  11. Ghee 3-4 tbsp

Instructions

  1. Heat ghee, add saunf, bay leaves, laung, cardamom, almonds, coconut, kishmish, washed rice and 1 3/4 cup water.
  2. When it starts boiling, cover and cook at low heat till the water is absorbed.
  3. Meanwhile, in a pan heat 1/4 cup water by adding jaggery. Stir till it is mixed in water at low heat.
  4. Add a little milk to remove impurities.
  5. When rice is cooked, add in gur water, bring to a boil, then again cover and cook at low heat till water is absorbed.
