Vegetable Quinoa

Ingredients to make Vegetable Quinoa

  • Quinoa soaked for an hour 1 cup
  • onions chopped 1/2 cup
  • ginger and garlic chopped 1 tbsp
  • green chillies chopped 2
  • Chopped Carrots and french beans, peas boiled 2-3 tbsp each
  • Vegetable stock 1 1/2 cup
  • oil 2 tbsp
  • salt to taste
  • coriander leaves chopped 1 tbsp

How to make Vegetable Quinoa

  1. Heat oil, add ginger, chillies, garlic, onions and saute till translucent.
  2. Add boiled vegetables, soaked quinoa, salt and stock and cover and simmer till done.
  3. Add coriander leaves.

My Tip:

Don't use the water used to soak quinoa, it will make the dish taste bitter.
