Ingredients Serving: 8

  1. Refined flour(maida) - 250 gms
  2. Condensed milk - 1 tin
  3. butter – 125 gms
  4. sugar – 6 tsp
  5. pineapple slices – 10
  6. Club soda – 1/2 cup
  7. Baking powder - 1 tsp
  8. baking soda – 1 tsp
  9. salt -a pinch
  10. Yellow food colour – 1/2 tsp
  11. pineapple essence - 1/2 tsp
  12. Glazed or fresh cherry – 6


  1. Take sugar in a pan & caramelize it, until sugar dissolves & turns into a golden brown syrup. Remove from heat & pour in the baking dish to coat the base evenly.
  2. Arrange pineapple slices over it, put cherry or walnut pieces in between the pineapple slices.
  3. Mix refined flour, salt, baking powder and baking soda & sieve twice. In a mixing bowl, add melted butter, essence, colour, condensed milk & mix well.
  4. Chop 4 pineapple slices into small pieces, mix in the butter & milk mixture. Add 2 tbsp flour mixture in the mixture & mix well.
  5. Add 2 tbsp of soda water & mix. The mixture should be of dropping consistency. Bake in a preheated oven at 170°C for 40-45 minutes.
  6. When ready remove from the oven & cool for 10 minutes. Run a sharp knife around the edges & then invert the cake onto your serving plate.

Came out really well...the flour raised well during cooking but it became a little flat when taken out of oven...any reason
