Ingredients Serving: 4

  1. Dates pitted and finely chopped- 75 gms
  2. Dates pitted and pureed- 75 gms
  3. Water hot - 125 ml
  4. Self Raising Flour- 275 gms
  5. Refined Flour - 75 gms
  6. Demerara Sugar - 1 1/2 tbsp.
  7. Cinnamon Powder - 1/2 tsp.
  8. Milk - 500 gms
  9. Butter melted - 75 gms
  10. Egg whisked 1
  11. Demerara Sugar - 120 gms
  12. Butter - 60 gms
  13. Fresh Cream - 275 ml


  1. Place dates in a glass bowl. Pour over them the boiling water. Set aside for 15 minutes until soft.
  2. Chop 1/2 of them very finely and puree rest of them.
  3. Sift flours, sugar and cinnamon powder in a large bowl. Add milk, butter, egg and date mixture. Whisk until it is well combined and lump free.
  4. Brush two small non-stick frying pans with a little of the extra melted butter. Heat over medium heat. Add 20 ml of mixture to each pan. Cook for 2 minutes, or until bubbles appear on the surface. Carefully turn over and cook for 1 minute.
  5. Place prepared pancakes on a plate and wrap loosely in a clean tea towel to keep warm. Repeat with remaining batter, greasing pan between each batch.
  6. For the Caramel sauce : Place cream, butter and sugar in a small saucepan. Stir over low heat until butter melts. Increase heat and simmer for 10 minutes, until sauce thickens. Pour into a glass sauce pourer and set aside.
  7. To serve, place pancakes on the serving plates and pour over caramel sauce.
