ABOUT Baby's Quinoa Bites (9 months +) RECIPE

Savoury bites with the goodness of quinoa.

Ingredients Serving: 4

  1. 1 cup cooked quinoa
  2. 2 small eggs , beaten
  3. 2 tbsp chopped fresh coriander
  4. pinch of freshly ground black pepper (optional)
  5. 1/2 onion, finely chopped
  6. 2 tbsp grated cheese
  7. 1 clove of garlic, crushed
  8. 1/2 cup fresh whole wheat bread crumbs
  9. olive oil

Instructions

  1. Combine all the ingredients in a large bowl and allow to rest for 5 minutes, to give the breadcrumbs a chance to soak up the liquid.
  2. The mixture will still be very damp and loose - you might even think it is too loose for patties. But it is important not to allow it to be too dry, as the mixture dries out significantly whilst cooking.
  3. With your hands, make around 16 loose patties.
  4. Heat a little olive oil in a non stick pan over a medium heat.
  5. Add the patties to the pan. Press down on them carefully.
  6. Cook for around 5 minutes until golden, then carefully turn and repeat on the other side.
  7. When cooked, allow to cool to a safe serving temperature and serve just as they are, or with a dip or a sauce.
