Ande ka Khagina

Ingredients to make Ande ka Khagina

  • 3 eggs
  • 2 medium size onions
  • 3 green chillies
  • 1 sprig of curry leaves
  • 1 tbsp chilli powder
  • 1/4 tsp turmeric
  • 1 tsp ginger/ garlic paste
  • salt to taste
  • 4 tbsp oil
  • 1/4 tsp dhania powder
  • 1 tbsp coriander leaves

How to make Ande ka Khagina

  1. In a pan, add oil (cook on medium flame).
  2. Add chopped onions, fry until they turn light golden in colour.
  3. Add slitted green chillies, curry leaves, turmeric and salt, saute for 1 minute.
  4. Add chilli powder and dhania powder.
  5. Now break eggs into the pan, do not mix. Close the lid and cook on low flame for 5 minutes.
  6. Turn on other side and cook for 2 minutes.
  7. Garnish with chopped fresh coriander leaves.

My Tip:

After adding eggs, check the curry to avoid burning.
