ABOUT Healthy Breakfast Egg Salad RECIPE

This egg salad is a healthy and testy too. You can even make it as a snack in the evening for the kids or yourself.

Ingredients Serving: 4

  1. 4 - Egg hard boiled
  2. 4- Cabbage leaves
  3. 1/4 Cup - Spring onion, chopped
  4. -1/4 Cup - Celery leaves
  5. 2 tbsp- Coriander leaves
  6. 1 - Green chilli
  7. 2 medium - Boiled potatoes
  8. For dressing : 1 tbsp - Sweet tamarind paste
  9. 3 tbsp - Tomato sauce
  10. 1 tsp - Chili powder
  11. 1/4 tsp - Black pepper powder
  12. 1/2 tsp - Chat masala (for Indian twist)

Instructions

  1. Boil the potatoes and the eggs separately. Peel and keep aside.
  2. Heat 1 tbsp olive oil in a frying pan and fry the potatoes till crisp and golden in colour. Remove the pan from heat and remove the potatoes in a serving plate. Add cabbage leaves, celery leaves, spring onion, coriander and mix the olive oil in it so that everything is well coated. .
  3. For dressing : Whisk all the ingredients of the dressing in a small bowl. Keep aside 1 tbsp dressing for the eggs. Pour the rest of the dressing over the veggies in the plate and mix well. Transfer to a serving plate and keep aside. Arrange the egg on the salad and put a drop of dressing on each piece of the egg.
  4. Serve while still hot.
