Butterscotch Strawberry Trifle

Ingredients to make Butterscotch Strawberry Trifle

  • Milk 1 1/2 Litres
  • Light brown sugar 4 tbsp
  • Salted butter 2 tbsp
  • Heavy cream 1 cup
  • Whipping cream 1 cup
  • Icing sugar 2 tbsp
  • Chocolate cake crumbs 2 cups
  • Vanilla custard powder 3 tbsp
  • Strawberries 400 gms
  • Fine sugar 2 tbsp
  • White Wine 1/4 cup
  • water 2 tbsp

How to make Butterscotch Strawberry Trifle

  1. Chill the whipping cream and the bowl you plan to use.
  2. In a sauce pan heat the brown sugar and water till it caramelizes. Add the butter and let it melt. Add the heavy cream and let this all come to a boil.
  3. In another pan boil the milk. Mix the custard powder in a little water to make a paste. Add this to the hot milk. Turn on the heat and continue to cook. The custard should be very thick. Add the butterscotch sauce to this and mix well.
  4. In another pan cook the strawberries with white sugar and wine for about 2-3 minutes to form a compote. (Keep aside)
  5. For assembling take a deep bowl with straight sides
  6. spread half of the strawberry compote at the bottom.
  7. Pour in one third of the custard.
  8. Sprinkle with the chocolate cake crumbs
  9. Repeat custard and cake till you have a total of three layers. Top it with the remaining strawberry compote. Chill for 2-3 hours.
  10. Whip the cream with icing sugar till it forms soft peaks. Swirl on the top in a pattern of your choice. Chill preferably overnight or at least 3-4 hours before serving. Enjoy.

My Tip:

Use salted butter for the butterscotch sauce. Makes a difference.
